"we are indeed selling a grinder, but it's not our make, it's made by a German-owned company, manufactured in China, and it's a pro-oriented grinder with a larger hopper and weighed grinding capability. We add a scale, scale stand, and portafilter stand (on the scale) to that grinder, to make something a bit new on the market."

    "Dead simple
Instead of using a timer, which rarely gives you a precisely weighed dose, you simply turn the grinder off when the scale display reaches the weight you want. Low tech works best."

Hi Yoshi, here are the specifications on the grinder.

    Specifications
64mm flat burrs. Made of food grade hardened tooling steel. Burrs manufactured in Italy by Italmill. Grinding speed: from 1.5 to 4.0 grams/second. Dimensions: 56cm x 21cm x 33cm. Hopper capacity: 1.2kg. Power consumption: 11A 350W. Grinding capacity: 1000 drinks per day.

Dirk emailed me directly with more questions.

Yes, our grinder is based on the Hey Cafe HC-600 ODG v3, but we have modified the portafilter stand to be replaced with our scale, scale stand, and portafilter stand. The current model has a manual on/off switch, so that you stop the grinder yourself when you see the weight reach the target. We also remove the static shield on our grinders, as it causes clumping, just as this same "feature" does on Mazzer Roburs. We haven't found any static electricity problems with this grinder, so the static shield was an anti-feature, in our opinion.

Hey Cafe was acquired a few months ago by the company that owns Mahlkonig and Anfim.

The reason I chose this grinder model is that it is the only inexpensive grinder that I can see *not channeling* when shots are made on the DE1+. When pressure rises, the DE1+ shows the pressure at the puck, and with all the inexpensive grinders I have tested, they all lose pressure during this stage. Many grinders also cause the espresso to lose pressure during the main extraction stage of the shot, and this is very bad. The pressure consistency on our grinder is about the same quality as the Robur, once you remove the static-shield from the Robur. With the static shield left in place, the Robur creates very bad clumps which cause very bad channeling.

I have plans to make a video showing the pressure-consistency curves of various grinders, from shots pulled on the DE1+. It is my opinion that this is a good way to evaluate grinders. I also find that the rate-of-flow-increase-over-time is another useful measurement, because a grinder that creates many "fines" will cause espresso shots to have a fast-accelerating flow rate, as the fines migrate out of the puck through the coffee basket holes.

In my demonstrations at cafes during November/December, I have had a chance to test most commercial grinder models. My opinion is that the Mythos is by far the best grinder currently available. The Peak is also excellent, but apparently has reliability problems at the moment. The EK is also fantastic, but not very practical. My goal with our grinder was to make something available that was at the average level of professional grinders (Robur) but less expensive, and with integrated shot weighing.

We're also working on a more expensive grinder model for the future that will be bluetooth controlled, and will include our bluetooth tablet, so that you can specify weighed doses. It will come with a bluetooth controlled power plug as well, which turns the grinder on/off. I am attaching a screen picture of the tablet UI below. Our current grinder will be upgradable to the bluetooth version when that new model becomes available.

@decent_espresso: Thank you very much for the detailed spec.
On your website you're mentioning conical burrs. Is it a mistake or do you have some further plans?

[QUOTE = "Lenin, post: 1336504, member: 12333"] Thank you very much for the detailed spec.
On your website, you're mentioning conical burrs. Is it a mistake or do you have some further plans? [/ QUOTE]

It was a mistake, I have corrected the web site, it is flat burr, with Italian burrs from Italmill. My apologies for the mistake : an earlier model of the Hey Cafe grinder was conical (it was a Robur clone about 20 years ago) and I had an old data sheet from the manufacturer when the web page was made.

I don't make any claims that this is a revolutionary grinder, it is simply what we found this grinder to be a good value (price/performance), and because the shape was not so strange, we were able to mount our portafilter stand onto it. We've tried mounting our stand on Mazzer grinders, but the shapes of their grinders doesn't leave much space to get a scale under the portafilter, so we decided to source our own grinder. So far, the only other grinder I've found that I can mount a scale to is the Anfim Super Caimano, which is a grinder I have owned for many years, using it at home.

As to the Fiorenzato grinder, it appears to me that it cannot weigh while dosing into a portafilter, instead it uses weight to calibrate the timer, and then it does timed shots into the portafilter. That approach might work very well, but it is different from weighing the dose when grinding into a portafilter.

thanks decent for clearing up our mindclouds here by offering some detailed specifications to your pro model grinder.

    ot-
    is that so?

i thought it occurs when the basket has worn out, and contemporary sieves have much finer holes than the standard's have.
usually the fines stay inside the puck leading to an increase of flow as soon as they are completely immobilised and extracted.
please someone correct me if i got it wrong, although this thread seems to have a different topic.

nice and comprehensible approach suiting your fixed pressure machine like most are. levers and pressure profiling machines take an other path.
but i do understand you are creating a harmonizing set of hardware.
    -ot
imo the burrs used count, whilst other specs seem rather normal for a 64mm burr grinder.

one cannot piont out enough how pleasant this kind of openness appears to me.

    BINGO:p

It is my opinion that both things can happen, depending on circumstances.

The big controversy with VST baskets when they first came out is that they let more fines into the cup. This caused a thicker "mouth feel" and also a top to the espresso that looks like chocolate powder. Now, the VST approach is accepted, and some people complain that some grinders create "dirty" tasting espresso, because too many fines have gone into the cup.

I do not think that "cheap portafilter baskets" have holes that are larger or smaller, it's that the shape is irregular (not round) and inconsistent (many different hole sizes). But, that is a different topic from grinders.

If the grind is too fine overall, the obviously your shot will clog up.

There is absolutely an increase in flow rate during a shot, if pressure is kept constant. This is simply due to the fact about 20% of the coffee material erodes into the cup during espresso extraction.

I don't have data to prove this, but my current theory about shots that rapidly speed up is that they have "boulders" (large coffee particles) and "fines" and that the fines are flowing around the boulders into the cup, rather than staying in the basket and being eroded. The quickly-speeding-up-shots generally taste muddy.

When I use a really good grinder (Mythos or Peak) I tend to see less shot speedup, which makes me think that what is going in the cup is eroded flavor material, rather than movement of particles into the cup.

This is a "reverse causation" assumption, in that these great grinders make great coffee, AND the flow profiles look a certain way, so I'm assuming that the flow profile looking this way is representative of a good espresso shot, and possibly the cause. This is not very good science, it just a working theory that needs testing.
