    Hat zufällig jemand eine Niche Zero da stehen und kann etwas zur Farbkombinationen von Mühle und Siebträger sagen?
    Meine Niche kommt die Tage in weiß.

    das sind alles ziemlich wilde spekulationen die faktisch aber beide geräte betreffen. man müsste ja für beide mit dem gleichen kaffee und der gleichen mühle den für dich relevanten shotverlauf messen. zunächst mal: die grenzen der xenia, die mir viel eklatanter erscheinen und die iskanda immer runter spielt: keine einfach wählbare temperatur (kein PID). wenn du dunkel trinkst - egal. wenn du medium/hell trinkst: großer unterschied.

    ich kann dir folgendes sagen: ich habe mit einem K-Fühler im puck (scace für arme) bei realistischem flow (der wahrscheinlich etwas schneller ist bei mir als deiner sein wird, weil ich unimodales mahlgut habe), bei normalen shots eine intrashotvariabilität von 1.5 grad gemessen.

    dann habe ich (vor meinem umbau, ich habe eine UNO mit nadelventil ausgestattet) einen hack angewendet, bei dem ich für ca 5-8s das dampfventil beim bezug voll geöffnet habe und danach zunehmend geschlossen. dh ca 10-12s maximaler bis sehr hoher flow durch den TB und dann "normaler" bezug (shotlänge vl 35-40s insgesamt). dabei ergab sich bei zwei messungen eine intrashotvariabilität von 2.0 und 2.3 grad.

    nachdem ich das nadelventil drin hatte habe ich ca 20s PI bei etwa 45g/30s flow und dann bezug für etwa 25-30s (slayer shot) gemessen, dabei lag die intrashotvariabilität bei 2 messungen bei 5 bis knapp 6 grad über einen 50s shot. zunächst +1.5 grad hoch in der PI phase und von da aus knapp 5-6 grad abwärts, dh -4-4.5 grad vom startwert runter. wie gut das die slayer, die etwa 10.000 euro kostet kann, weis ich nicht, aber ich finde das sehr respektabel. das sind, wie du merkst, extremshots. der für dich relevante wert ist vielleicht der bei meinem hack vor dem umbau, also 2-2.5 grad variabilität. ob du dann die sensorik hast dafür ist eine frage, wie es die xenia macht, die nächste.

    Auch dir vielen Dank. Wobei sich das so liest als würde das bei der UNO aber nicht der DUO klappen.

    Ich möchte gerne meinen Horizont erweitern und auch gerne hellere oder sagen wir häufiger verschiedene Sorten antesten, was mir bisher nicht so schnell bzw mit viel Mühe gelungen ist.

    Wir sind in 99% der Fälle zu 2.
    Trinken jedoch überwiegend Cappuccino. Was jedoch auch wiederum daran liegt dass ich pure Espresso aus den dunklen Bohnen nicht so gerne hab.

    Ich kann keinen konkreten Grund nennen warum ich speziell nach Café Creme Eignung schaue... Vermutlich weil 1500 Euro (für ein paar Tassen Kaffee) nicht wenig sind. Und, ja ich weiß dass es nicht DIE perfekte Maschine gibt.

    Was ich an meiner derzeitigen Situation nicht so toll finde ist in erster Linie die Aufheizzeit für einen spontanen Kaffee.
    Dann kommt das ich gerne schneller und gezielter die Temperatur einstellen möchte.
    Zum Teil spielt aber auch einfach nur rein, das man mal ein neues Spielzeug möchte. Wobei man hier sagen muss ein Chrombomber macht mehr Eindruck. Aber die Aufheizzeit bliebe dann bei den meisten gleich.
    Nimmt man noch PID und sowas dazu, bleibt die Ascaso beinahe alleine übrig (im bezahlbaren Rahmen).

    Mal eins, zwei Quickmills ausgenommen.

    Bleibt eigentlich nur zu hoffen, das man von einem PID im Alltag auch nutzen hat... Sofern man gerne die Bohnen wechselt.

    du hattest ja nach dem verhalten des TB gefragt. das sind die messwerte, die ich habe. der hack geht natürlich nur mit der UNO, aber der TB und der aufbau ist ja der selbe, sprich die "ergebnisse" sind übertragbar. du hast werkseitig eine bis zu 5s dauernde PI wählbar.
    wenn du spielen willst oder auch hellere bohnen nutzen willst (die wunderbar im cappu schmecken) dann - aus meiner sicht - kein zweikreiser. allerdings muss man für den ganzen krempel auch die sensorik entwickeln. die pid verstellung geht sehr einfach, ich nutze sie ständig. ich trinke nur mit milch - mir war es das geld nicht wert auf die duo. erst die x espressi ziehen, dann 1.5minuten warten und dann dampf. aber ich bin auch kein mensch, dem diese art von komfort auch nur ansatzweise wichtig wäre.

    Aber das ist meine ungefilterte Meinung.

    Dazu kann ich nichts sagen,da ich diese Röstungen nicht sonderlich mag. Was ich aber sicher sagen kann, ist dass die Röster mit hellen Röstungen immer sehr zufrieden waren mit den Ergebnissen aus der Xenia. Und sehr viele Kunden nutzen helle Röstungen (besprechen sogar vereinzelt die Ergebnisse auch hier im Forum) und zumindest für die scheint es zu passen.

    genau. entschuldige, aber da du dich nun direkt einschaltest: das kann man aus meiner sicht eben nur dann sinnvoll sagen, wenn man von hell keinen sensorischen plan hat. und es regt mich jedesmal auf, wenn ich es von dir lese. das ist nun meine ungefilterte meinung.

    und auch hier: keine ahnung über wen du da sprichst und was der kontext dieser aussagen ist (gibt ja auch sowas wie soziale erwünschtheit...) egal: ich kann für mich SICHER sagen, dass unterschiede im gradbereich einer PID einstellung (und natürlich sind das gemittelte unterschiede) zT (und das hängt eben sehr von der bohne ab) ganz deutliche unterschiede im geschmack machen KÖNNEN. und ich kenn mich auch bissl aus mit hell. dh ich kann direkt drüber reden. du kannst über dritte sprechen und zitierst das immer wieder um bestimmte aspekte aus deiner sicht als nebensächlich darzustellen.
    was sie für manche bohnen und manche menschen auch sind. aber wie so oft gilt: es kommt drauf an.

    edit: und was manche hier als hell interpretieren ist für manche hier schon dunkles medium. ist ohne tonino halt schwierig.

    von mir aus: du verkaufst die xenia. und in etlichen kontexten, so auch hier, sagst du regelmäßig wie du es siehst und "untermauerst" das mit referenzen auf andere, die sich angeblich damit auskennen. das findet in meinem gefühl häufiger in einer form statt, bei der ich persönlich den kaffeetrinker iskanda nicht vom verkäufer isaknda trennen kann. außerdem fehlen mir persönlich (!) oft einschränkende und relativierende floskeln. beides zusammen empfinde ich als unzureichend transparent und das regt mich auf. du kannst natürlich sagen was du möchtest zu themen mit denen du dich nicht persönlich auskennst (helle bohnen, deren zubereitung und entsprechende sensorik), du könntest es aber eben auch lasssen! ich für meinen teil möchte allerdings nun an dieser stelle sagen, dass mich das mehr oder weniger nervt.

    Ok, ich denke ich verstehe und ich finde deine offene Art gut.

    Mein Fazit:

    Würden wir keine Maschinen bauen, wäre meine Meinung zu dem Thema nicht aufregend, da (nun meine Interpretation) die Vermutung besteht, ich würde mich nur deswegen so äussern, weil ich den Verkauf unserer Maschinen im Sinn habe.

    Weitergedacht: Hätten wir eine Maschine, die das kann, von dem man denkt dass es für diese hellen Röstungen zuträglich ist, wäre meine Meinung wieder ok.

    Dann können wir das jetzt so stehen lassen.

    Sorry for my English (my German writing skills are not so good).

    I have bought the Xenia after considering also the Ascaso Duo Steel (and other devices) seriously. I have hardly seen a vendor being so open and transparent about the internals and motivating his design choices with measurements to explain the design of his machine. Hardly any info can be found on Ascaso, it would be worthy if they (and other vendors) would be more present in forums as well. It is their choice not to do so.

    I'm using the Xenia with light roasted coffee (and dark), and get similar results as with the Kees van der Westen Mirage machine in the shop where the beans are roasted.

    Some customers report controlled changed temperature profiles over time gives them different (better?) results (like with the Decent espresso machine). So whether a constant temperature within a few of tenths of degrees will give you a better coffee than one where the temperature changes 1,5 degrees (controlled) over time (solvability of caffeine only changes with ~10% for 1/3rd of the time where the extraction of the coffee becomes less...), is highly debatable.

    As far as the system is repeatable, I think there are other parameters that are more difficult to keep constant and have way more impact to the sensory aspects of the coffee (e.g. environmental humidity and grinder settings; progressing taste change of light roasted beans that are a few weeks old over a few days time).

    welcome to the forum!....since this is not an ascaso xenia comparison thread (the one that has been mentioned just a few posts before) i would suggest that all further comparison statements move to this thread....maybe even the last posts can go there....i might ask the mods tomorrow.

    in general, i simply can not agree with what you claim, not concerning the xenia (that is just an example), but concerning temperature and its impact in general. you overexegarate in your examples. it’s not about tenths of degrees. and it is not (only) about repeatability. saying that say changes in humidity have more impact on the taste than temperature is not only bizarre to me but getting the concepts/mechanics wrong imho. anyway: in my experience one degree change in temperature CAN (depending on the bean) make a huge difference. not has to. but just recently i had two beans (filter roasts from april copenhagen) that just truly changed their profile towards the better with just one degree. and again, sorry for sounding arrogant: of course you have to train your sensory skills.
    and post scriptum: without a tonino....i really do not know what people call “hell”. april filter is an example of a very “hell”/bright FILTER roast. and i HIGHLY doubt, that a shot on a machine with say more or less fixed temperatur and these beans would satisfy my needs for a good shot.i started years ago with a quickmill 0820. and one of the first things i tried to learn was : temperature surfing.

    The topic is more general on the impact of temperature, as you say devices are just an example. I'm not saying temperature differences do not make a difference. There are other parameters that make a larger difference to my experience. I have a lot of blind tasting experience in wine, and I know how difficult it is to make mistakes with putting assumptions and correlations to the tasting experience. No blind tasting experience in coffee, but a strong tasting memory.

    As for humidity; during my holidays in Italy I've asked to a barista making an espresso every morning if he changed some setting at a specific day. He smiled, and said he didn't. Then he pointed outside to the (first time) cloudy weather, and he said "I should have changed the settings, it is more humid, and hence the beans have absorbed moisture". Maybe you should practice your sensory skills if you don't taste that :) Good baristas do change their grinder settings every morning (for light roasted fresh beans) as the taste develops so quickly over time.

    With temperature you can influence the result, but if a temperature profile develops in a repeatable way over time, you can work with that. The claim that a PID is more important (and implicitly require constant temperature) is an assertion that is not generally true. Again, if you want to do temperature profiling, you need more than a PID, and a Decent is more appropriate, as it allows you top change temperature/flow/pressure over extraction. You could even automate the process, i.e. add an NFC tag in the coffee, hold it against your machine, have a wife connection that gets the weather conditions, et voila, your machine adapts to the ideal parameters. This all assumes we would have the same tast, but I strongly believe that adapting a baseline setting help way more people, and with machine learning you can even account for that. ;-) We just have to wait a couple of years/decennia before we are there.

    that is what i meant with mechanics: you basically don't taste the humidity but the influence on grinding results which of course makes a difference.
    but again i have the feeling that i can not make my point clear, because you keep talking about temp profiling and that is NOT my point....of course: given a repeatable temp curve is cool.you CAN work with that, but being able to SHIFT this curve is cooler. for me. obviously not for you.
    and if you give me the money for a decent: a repeatable, profilable, shiftable temp curve is: of course the coolest.

    @Sebastiano Danke für die Extensive Posting. I can read and understand German very well, I can speak it fairly well, but writing is a bit problematic.

    I have the book "The Craft and Science of Coffee" edited by Britta Folmer. In Chapter 15, extraction parameters are extensively addressed. The solubility of caffeine (top) and citric acid (bottom) in water in relationship to water temperature is shown. This shows that the warmer the water temperature, relatively more bitters will be extracted (which is true for temperatures above 80 degrees)

    @Zuvca, I was confused by PID temperature control; this is more about temperature control than temperature setting. Setting/shifting the temperature is also possible on the Xenia, just push the left top button to the right, and you get 1 degree more, or set it permanently by adjusting the boiler pressure by an adjustment screw.

    yeah well, i assume machines at a given price range can deliver sufficient stable temperature, that’s not my concern, and i think - like you - that a repeatable curve is good enough for the money i have ;) ...or am willing to spend on a machine. things are different for money on grinders :D
    and i get incredible results with the kompresso :). but here you can compensate the lack of temperature by flow/pressure profiling the old school way.
    i just checked the xenia manual. as far as i understood this +1 move is just active for a few minutes, and is more like a check and not like a modus for predefined and „exact“ temp change over time. and it is just + not -. for that you would have to take the screwdriver...and would have to do it more or less by guessing/experimenting. all of this would not fit my needs.
    i often change temperature, so i want it easy and not by adjusting a screw with limmited knowledge of the effect...i.e. it is not precise and repeatable enough for me.
    edit: honestly ifeel a bit bad for occupying thisthread with this albeit interesting but none the less a bit OT content....so i will end my contribution for the temp discussion here unless it gets more ascaso related....

    FRAGE: Ich habe eine Ascaso Steel Duo PID - kann aber nicht checken, ob man mit Blindsieb und Reinigungspulver reinigen sollte? Wie geht das? Wie oft? Die Anleitung von Ascaso ist dazu einfach beschissen. Könnt ihr mir dazu helfen?

    Gute Frage - entkalken ist klar. Ich habe die Maschine auch neu und habe mir zumindest jetzt mal Kaffeefettlöser besorgt und werde das so alle 2 Monate mal mit Blindsieb zum rückspülen nutzen - müsste doch eigentlich genauso sinnvoll sein wie bei anderen Maschinen auch. Würde mich aber auch interessieren was die "alten Ascaso Hasen" dazu sagen.
